Shrimp & Corn Salsa Crostini
1/4 cup diced Tomatoes1/4 cup Cilantro1/4 Red Onion1-Clove Garlic chopped1/2 lime squeezedLime dressing1 lime squeezed2 tablespoon of sriracha2 tablespoons Tamari2 tablespoons of homey2 tablespoons rice rice vinegarFrench Baguette- cut and toastedShrimp – peeled cleaned and deveined
French Baguette- cut and toastedShrimp – peeled cleaned and deveined – grill or pan sautéFresh Corn – grilled or sautéedCut the corn off the cob with a sharp knife and saute in apan with a little oil for 3-5 minutesCombine corn, tomatoes, red onion, garlic, cilantro andlime juice in a bowlIn a separate bowl, combine lime juice, avocado oil, honey,soy sauce, rice wine vinegar and sriracha(optional)Whisk and add half to the corn salsaTo finish – Build your crostini.Add any extra lime sauce and cilantro for garnish
